NUTS - Spicy Coated Nuts

Spicy Coated Nuts | |
2 1/2 pounds | mixed nuts |
2 egg whites whipped until foamy and almost stiff | |
1/4 cup | white sugar |
1/8 cup | light brown sugar |
1 teaspoon | cinnamon |
2 1/4 teaspoons | cayenne |
2 1/4 teaspoon | salt |
Preheat oven to 325°. Mix all ingredients together in a large bowl. Make sure all nuts are coated in egg white. Pour nut mixture out onto two 13 x 9" sheet pans lined with SIL pat or parchment paper. Bake nuts stirring halfway through until dry and crisp, 30 minutes. Let cool before serving.
