Combine 1/2 gallon apple cider, 1 cinnamon stick, 3 cloves
and 1 star anise pod in a saucepan over medium-high heat,
simmer until reduced by half, then let cool.
Coat rim of a flute with equal parts granulaied sugar and
ground cinnamon. Add 1 ounce apple cider reduction and
top with 4 ounces sparkling wine.
