Blueberry pancakes

1 1/4 cups | flour |
1/2 tsp | salt |
1 tablespoon | baking powder |
1 1/4 tsp | sugar |
1 | egg |
1 cup | milk |
1/2 tablespoon | butter, melted |
1/2 cup | frozen blueberries, thawed |
Sift together flour, salt, baking powder, and sugar in a a large bowl.
Beat together egg and milk in a small bowl with fork and add to flour mixture.
Mix in butter and fold in blueberries.
Refrigerate about 1 hour. ( this allows the the baking powder to form bubbles that will make your pancakes fluffier and more tender.)
Heat a lightly oiled griddle or frying pan over medium heat. Working in batches of 2, scoop 1/4 cup batter onto griddle for each pancake . Cook until does are dry and bubbles form on top, about 3 minutes.
Flip and cook until golden, about 2 minutes more( you may need to reduce heat to medium - low to avoid burning.
Prep 10 minutes
Cook 30 minutes
Makes 12 pancakes
