Wild Mushroom Soup

3G | butter |
1 sm | diced yellow onion |
1 T | chopped garlic |
1/2 lb EACH | shiitake, cremini, domestic mushrooms |
1/2 gallon | chicken stock |
1/2 gallon | vegetable stock |
1 pint | heavy cream |
Lemon juice to taste | |
Salt | |
pepper | |
Fresh thyme |
Sauté onions in butter until translucent.
Add garlic and site until fragrant.
Cut mushrooms into chunks and add. Sauté until they start to give off .iquid.
Add stocks and cream.
Bring to boil.
Add lemon juice to taste.
Reduce heat to simmer for 5 mins. Purée.
Season w salt and pepper. Garnish w thyme.
