Peach mustard

    1 large  ripe peach
    2 tbsp  sugar
    1 tsp  Apple cider vinegar
    1/2 tsp  salt
    1/3 cup  Dijon
    1/3 cup  whole grain mustard
    1 tbsp  fresh chives finely chopped
      Fresh ground pepper

1. Using the tip of a knife put an x in the bottom of the peach. Cook in a small saucepan tip skins starts to peel. About 30 sec.. Transfer to bowl of ice water. Let cool and coarsely chop.
2 bring peach sugar Apple cider salt and 2 tbsp water. Reduce heat and simmer stirring occasionally til thickened. 5-8 min. Pulse until chunky do not purée. Transfer to bowl. Let cool.
3. Mix in mustards and chives. Add salt and pepper to taste. Can be made ahead but omit chives til just before serving
