Tomato Mac and cheese

1 lb or 450g | macaroni or short pasta |
1 tbsp | butter |
2-3 garlic cloves chopped | |
1 | onion chopped |
1 1/2 cups | milk |
2 Tbsp | Flour |
1/4 cup | tomato paste |
1/2 tsp | dried oregano |
2 tbsp | fresh parsley |
1 1/2 cups | cheddar grated |
Salt | |

1. In a large quanity of salted boiling water cook pasta for 1 minutes less than package. Drain.
2. In saucepan used to cook pasta melt butter and brown garlic and onion for 2 mins.
3. Mix milk and flour and poor into saucepan. Stir using a whisk and let simmer til it thickens.
4. Add tomato paste, oregano and parsley.
5. Gradually add cheddar and season.
6. Add pasta, stir with large spoon reheat and serve right away
