Beef and barley slow cooker stew

1 lb | stewing beef |
2 tbsp | vegetable oil |
2 | onions chopped |
2 | carrots chopped |
6-8 cups | beef broth |
1/2 cup | pot, pearl barley rinsed |
1 tbsp | brown sugar |
1 tbsp | tomato paste |
1 tbsp | vinegar |
1/2 tsp | salt |
1/2 tsp | thyme |
1/4 tsp | pepper |
1 cup | peas |
1. Add beef and 1 tbsp oil in large skillet and brown on med-high heat. Transfer to slow cooker.
2. Add remaining oil or pan, onions and carrots until lightly softened. Stir in broth about 2 cups, barley, brown sugar, tomato paste, vinegar, spices. Bring to a simmer. Pour into slow cooker. Cook on low for 8-10 hours. Add peas.
3. Serve over mashed potatoes or with crusty bread
