Whoopie pies

Whoopie Pies Beat 2 eggs and 2 egg yolks (save the whites for the icing). Add: 1 cup Crisco shortening | |
2 ½ cups | sugar |
2 tsp. | vanilla |
1 cup cocoa powder: Gradually add: | |
5 cups | flour with 1 cup sour milk and 1 cup hot water. |
(Note: To “sour” milk, put one TBS. vinegar in cup measure and fill with milk to one cup line.) Add: | |
2 tsp. | baking soda |
Mix well. Drop from teaspoon onto greased cookie sheet. (I use a small cookie scoop.) Bake at 375 degrees for approximately 10 minutes. (Note: Keep an eye on the first batch and adjust the baking time as you need to. They will puff up a little in the middle and appear “dry” when they done.) Whoopie Pies - Filling | |
2 | egg whites, (these were saved from recipe above) – beat until they form stiff peaks |
Add: | |
Box | confectioners sugar, (1 lb.) |
½ cup | Crisco Shortening |
2 TBS. | vanilla |
4 TBS. | flour |
2 TBS. | milk |
Mix all ingredients well.
Spread between two cooled whoopie pies.
