Whoopie Pies Beat 2 eggs and 2 egg yolks (save the whites for the icing). Add: 1 cup Crisco shortening
    2 ½ cups  sugar
    2 tsp.  vanilla
1 cup cocoa powder: Gradually add:
5 cups  flour with 1 cup sour milk and 1 cup hot water.
(Note: To “sour” milk, put one TBS. vinegar in cup measure and fill with milk to one cup line.) Add:
    2 tsp.  baking soda
Mix well. Drop from teaspoon onto greased cookie sheet. (I use a small cookie scoop.) Bake at 375 degrees for approximately 10 minutes. (Note: Keep an eye on the first batch and adjust the baking time as you need to. They will puff up a little in the middle and appear “dry” when they done.) Whoopie Pies - Filling
2  egg whites, (these were saved from recipe above) – beat until they form stiff peaks
Add:
    Box  confectioners sugar, (1 lb.)
    ½ cup  Crisco Shortening
    2 TBS.  vanilla
    4 TBS.  flour
    2 TBS.  milk

Mix all ingredients well.
Spread between two cooled whoopie pies.
Enjoy!
