Carey's Stuffed Portabella Mushroom Caps

INGREDIENTS: |
1) 4 large Portabella mushrooms
2) 1 tbl soy sauce
3) 1 tbl lemon juice
4) 1 tbl olive oil
5) 35 pieces turkey pepperoni chopped
6) 3/4 cup shredded Parmesan cheese
7) 1 tsp minced garlic
8) 1 tsp Italian seasoning
9) 1 large tomato diced
DIRECTIONS:
1) Preheat oven to 350.
2) Remove stems and gills from mushrooms.
3) Mix soy sauce, lemon juice and olive oil and brush liquid all over tops and bottoms of mushrooms.
4) Bake mushrooms stem side down for 15 minutes.
5) Mix pepperoni, cheese, garlic, seasoning and tomatoes.
6) Fill caps with pepperoni mixture and bake for 15 minutes or until golden.
