BEEF - GROUND BEEF - CASSEROLE - Chili Frito Casserole

Chili Frito Casserole | |
1 lb | ground beef |
1 tablespoon | taco seasoning |
1 | onion, chopped |
3 cloves | garlic, minced |
1 (4 oz) can | diced green chilies |
Salt | |

1 (10oz) can | Rotel |
1 (15 oz) can | chili con carne |
1 tablespoon | chili powder |
1 (10 oz) bag | Chili Cheese Fritos corn chips |
8 ozs cheddar cheese, shredded Velveeta Cheese - 4 to 6 thin slices | |
1/2 cup | sliced olives |
3 | green onion, thinly sliced |
Sour cream for garnish |
Method:
1. Brown ground beef with onion, garlic, green chilies and taco seasoning
2. Season to taste with salt and pepper.
3. Drain fat.
4. Stir in ROTEL, chili con carne, chili powder, and olives.
5. Dump half the chips into a lightly greased 6 x 10 inch baking dish and spread evenly.
6. Top with half the chili mixture and half of the shredded cheddar cheese. Mix the remaining cheddar cheese with the rest of the chili mixture.
7. Create the top layer with the remaining chips and chili cheese mixture. Top with Velveeta cheese slices
8. Bake at 350 degrees for 20 to 25 minutes or until bubbly.
9. Remove from oven and top with green onion slices.
10. Serve with a dollop of sour cream.
