1/2 cup | minced onion |
2 cloves | garlic, minced |
1 1/2 teaspoons | ground cumin, divided |
1/2 teaspoon | salt |
3/4 teaspoon | chili powder |
1 pound 90% | lean ground beef |
2 (4-ounce) cans | mild, diced green chiles |
3 1/2 cups | cooked brown rice |
1/2 package | reduced fat cream cheese, cut into small cubes |
3/4 cup | shredded pepper jack cheese |
10 | tortilla chips, crushed |

Preheat oven to 400 degrees F.
Stir 1/2 teaspoon of cumin and 3 tablespoons of minced green chiles into prepared rice. Spray a 9 x 13-inch baking pan with nonstick spray. Spread the rice into the bottom of the baking pan. Scatter cubes of cream cheese over the rice.
Heat a large, nonstick skillet over medium heat. Add onions, garlic, remaining cumin, salt, chili powder and ground beef, stirring constantly to break up meat and incorporate all ingredients. Cook for about 5-6 minutes, until onions are softened and beef is no longer pink.
Drain fat off by emptying beef and onions into a fine meshed strainer. Add the beef back to the pan and stir in remaining green chiles.
Spread beef mixture evenly over rice and cream cheese. Top with pepper jack cheese, then crushed tortilla chips. Bake for 10-12 minutes, until cheese is bubbling.
Top with avocado and hot sauce, if desired.
