Squash Casserole

2 # | yellow summer squash peeled |
1/4 c | chopped onion |
1 can | condensed cream of chicken soup |
1 c | shredded carrots |
1 c | sour cream |
1 8 oz stuffing | |
1 c | melted butter |
In saucepan cook sliced squash and onions in boiling salted water for 5 mins. Drain.combine soup and sour cream; stir in carrots. Fold in drained squash and onions. Combine stuffing and butter. Spread half of mix on bottom of 12x7 baking dish. Spoon veg mix on top. Sprinkle remaining stuffing per top.
Bake at 350 for 25-30 mins.
