Spinach Salad (Ashbury Cookbook)

2 slice | bacon, cooked & chopped |
3 cups | broken fresh spinach |
1 cup | broken fresh lettuce |
2 | green onions, chopped |
2 | hard-boiled eggs, chopped |
1/4 cup | grated cheddar cheese |
Salad Dressing: | |
1 T | sugar |
2 T | mayonnaise |
2 T | mustard |
1 T | vinegar |
Mix bacon, spinach, lettuce, onions, eggs and cheese in a large boil. Mix ingredients for salad dressing well. Chill dressing well and pour over salad just before serving. If you want a wilted salad, heat the dressing in the microwave for 25 seconds on high and toss over salad.
