Grandma's Spaghetti with Meatballs
    8 small cans  tomato paste,, (either plain or w/Italian seasoning)
    24 cans  water
    3  bay leaves
    2 tbs  Italian seasoning
    1 tbs  basil,, (or 1 pkg fresh basil leaves chopped)
    4 lbs.  ground beef
    2 tsp.  Salt
    1 tsp  pepper
    2 tbs  garlic powder
    1/2 cup  chopped Italian parsley
    1 cup  bread crumbs
    1/2 cup  Parmesean cheese
    2  eggs
    1/2 cup  milk
    1 lb  fat back or salt pork
    1/2 cup  chopped Italian parsley
    6 - 8 cloves  garlic sliced in large pieces.
    1 cup  Romano cheese
    1/2 cup  sugar
    1 -2 lbs  ziti
      spaghetti, alternative
      angel hair, alternative

Spray large sauce pot with cooking spray. Whisk paste into water a can at a time until blended. Add seasonings and bring to boil. Reduce heat to low and simmer 1 to 1 & 1/2 hrs to reduce sauce.

Mix seasonings, breadcrumbs, cheese, eggs and milk with ground meat and form into 1 1/2" balls.

Fry fatback in pan to make oil. Remove any meat from pan and add parsley and garlic. Fry a few minutes, then fry meatballs in fat until brown and coated on outside. Remove meatballs and add remaining fat, parsley and garlic to sauce.

After 1 & 1/2 hrs of cooking, add meatballs to sauce. Add addtl seasonings to taste. At 1/2 hr before sauce is done, add Romano cheese and sugar. Total cooking time for sauce - 3 1/2 - 4 hours.

Cook pasta per directions.
