Make Ahead Potatoes

6 lbs | cooked and mashed potatoes |
12 oz | cream cheese |
3 tsp. | Salt |
1 head | roasted garlic |
1 1/2 cup | sour cream |
1/4 tsp. | Pepper |
To roast garlic cut off top of head until you can start to see the tops of the cloves. Pour olive oil on top. Place in oven on foil and cook until mushy when checked with fork. Cool a bit and squeeze to get garlic out of husks. Mix all ingredients and place in a 9 x 13 lightly greased pan. Dot with butter and sprinkle with paprika. Baked at 350 for 30 minutes. 45 minutes if potatoes were in fridge.
