Beer Battered Jalapeño Poppers

BEER-BATTERED JALAPENO POPPERS Poppers | |
Peanut Oil, (for frying) | |
10 large | Jalapenos |
8 ounces | Cream Cheese |
1/2 pound | Bulk Sausage |
10 slices | Bacon |
Batter | |
2 cups | All Purpose Flour |
12 ounces | Beer, (chilled) |
1/2 cup | Cold Water |
Kosher Salt | |
Freshly Ground Black Pepper |
Heat a deep fryer filled with Peanut Oil to 350°F.
Combine Sausage and Cream Cheese in a bowl, and set aside.
Using a paring knife, slice straight down one side of a Jalapeno. Next, remove the ribs and seeds and discard. Repeat the process with remaining Jalapenos.
Use rubber gloves if you have them. Fill the Jalapenos with the Cream Cheese and Sausage mixture. Wrap a slice of Bacon around the Jalapeno. Use a 12" skewer to secure the loose ends of the Bacon. Repeat process and set aside.
