Grandma's Cranberry Bread

(Makes 2 loads or 1 angel cake pan)
    3 cups  cranberries, (washed and dry)
    1 cup  walnuts, (optional)
    2 cups  sugar
    4 cups  flour
    3 teaspoon  baking powder
    1 teaspoon  baking soda
    1 teaspoon  salt
    2 cup  measure of squeezed OJ
    1  whole orange peel zest
    4 tablespoons  vegetable oil
    2 1/4 cups  boiling water
    2  beaten eggs

Preheat oven to 350 degrees
Sift together sugar and flour and add other dry ingredients
Add orange zest to orange juice
Mix vegetable oil, boiling water and OJ with dry ingredients
Add 2 beaten eggs (beat first)
Add nuts and cranberries
Grease and wax pans

Bake for 1 hour
Remove wax paper while warm
