Thai cucumber salad

3 cucumbers slice in half long ways and then cut in 1/4" pieces
    2  jalapeño peppers seeded and chopped, (if you want spicer leave seeds in 1 or 2 of the peppers)
    1/2 cup  chopped peanuts
    1 Tbs.  Salt
    1/2 cup  sugar
    1/2 cup  rice vinegar
    1/2 cup  chopped cilantro

Toss cucumbers in salt and place in colander in sink for 30 minutes to drain. Then rinse with cold water and pat cucumbers dry with paper towels. Whisk together vinegar and sugar. Toss with cucumbers, jalapeño peppers, and cilantro. Sprinkle chopped peanuts on before serving.
