PEAR COMPOTE WITH GOAT CHEESE & PROSCIUTTO The Chew Pear Compote 4 Bosc pears, peeled, 1/4-inch dice 4 Bartlett pears, peeled, 1/4-inch dice | |
2 cups | apple cider |
1 | vanilla bean, split, seeds removed |
2 | star anise |
1/4 cup | brown sugar |
1/2 teaspoon | salt |
TO BUILD | |
8 ounces | goat cheese |
1/2 pound | Prosciutto, thinly sliced, cut into ribbons |

Add all the ingredients for the compote in a medium sauce pot. Bring to a simmer and cook for 25 to 30 minutes. Remove from heat and let cool.
Spread some goat cheese on a cracker and top with a dollop of compote. Top with a couple ribbons of prosciutto and serve.
Tip
- Replace star anise with your favorite citrus or anise-flavored liquor.
