PEAR COMPOTE WITH GOAT CHEESE & PROSCIUTTO The Chew Pear Compote 4 Bosc pears, peeled, 1/4-inch dice 4 Bartlett pears, peeled, 1/4-inch dice
    2 cups  apple cider
    1  vanilla bean, split, seeds removed
    2  star anise
    1/4 cup  brown sugar
    1/2 teaspoon  salt
TO BUILD
    8 ounces  goat cheese
    1/2 pound  Prosciutto, thinly sliced, cut into ribbons

Add all the ingredients for the compote in a medium sauce pot. Bring to a simmer and cook for 25 to 30 minutes. Remove from heat and let cool.
Spread some goat cheese on a cracker and top with a dollop of compote. Top with a couple ribbons of prosciutto and serve.

Tip
- Replace star anise with your favorite citrus or anise-flavored liquor.
