ROASTED GRAPE SPREAD The Chew | |
1 pound | red seedless grapes |
extra virgin olive oil | |
pinch | sea salt |
1 teaspoon | fresh thyme leaves |
1 cup | sweet red port |
2 tablespoons | honey |
1/2 teaspoon | vanilla |
Serve with warm Brie
Preheat oven to 425°F.
Place the grapes in a baking dish and lightly drizzle with olive oil. Sprinkle with a pinch of sea salt and fresh thyme. Toss to combine. Place in the oven and roast until the grapes shrivel and just being to pop open, about 15 minutes. Remove from oven and reduce heat to 350 degrees F.
Drizzle the roasted grapes with port, honey and vanilla. Toss to combine. Place in the oven to roast for 15 more minutes, until much of the liquid has reduced.
Serve with warm Brie, toasted baguette and fresh grapes.
Tips
- Serve the spread warm out of the oven, room temperature or cold.
- The spread can be made up to a few days ahead of time. Store in an airtight container in the refrigerator.
