Pork chops with vinegar peppers

Ingredients: | |
1 tbs | olive oil |
4 | pork chops, 1 inch thick |
Salt | |
fresh ground pepper | |
2 cloves | garlic, minced |
2 cups | sliced mild pickled peppers, ( plus 2 tsp. juice |
3-5 | hot peppers, ( optional) |
1- heat the oil in a large skillet over medium high heat
2- when hot, pat chops dry, sprinkle with salt and pepper and add to skillet
3- cook chops, turning once for about 5 minutes on each side, or until brown
4- lower the hat to medium and scatter garlic around chops
5- cover and cook 5-8 minutes more
6- check for doneness
7- remove to a plate and keep warm
8- add the peppers and juice to the skillet
9-cook, stirring for 1-2 minutes or until the peppers are heated thorough
10- spoon the peppers over chops and serve immediately
