Apple Cake

    4 oz.  pecan
    1 cup  butter & 3 tbsp for pan
    2 1/4 cup  sugar
    1 lg  eggs
    2 1/2 cups  apple sauce
    2 3/4 cups 3 tbsp  flour
    1 1/2 tsp  cinnamon
    1/2 tsp  nutmeg
    pinch  cloves
    pinch  salt
    1 3/4 tsp  baking powwder
    1 tsp  vanilla
    2 tbsp  brandy
    1 lg  apple thinly sliced
    1/4 cup  brown sugar
    1/2 tsp  ground ginger

Directions
1. Heat oven 350. Spread pecans on a baking sheet, bake until toasted and aromic. Transfer to bowl to cool. Reduce heat to 325 and chop pecans.

2. Brush 10" spring foam with butter. Coat with 1/4 cup sugar and tap out excess.

3. In the bowl of electric mixwe fitted with paddle combine sugar,butter. Beat on med. speed until light and fluffy about 5 min. Add eggs 1 at a time beating 1 full min after each egg. Fold in applesauce, be careful not to ovwemix.

4. In a bowl sift flour, cinnamon, nutmeg, cloves, salt and baking powder.

5. Fold flour mixture and chopped pecans into applesauce mixture. Aded vanilla, abrandyand apple slices and mix until just combined. Transfer to prepared pans.

6. Combine the remaining 3 tbsp of butter, 1/4 tsp nutmeg, brown sugar and ginger. Mix with fingers until just combined, sprinkle lightly over batter. Bake until tester comes out clean about 1 hr. and 50 minuted. Trransfer to a wire ravk and cool completely.
