CLX Breakfast Caprese with Pesto Sauce

1 large | egg |
1 | egg white |
1 oz | buffalo mozzarella |
1/2 | roma tomato |
1/2 Cup | sliced mushrooms |
1/4 cup | red onion |
1 tablespoon | P90X PESTO SAUCE |
Cook mushrooms and onions over medium heat until soft. Whisk together the egg with the egg white and pour over vegetables. Cook until set and top with the mozzarella and pesto.
