Pork Chops with Mushroom-Caper Pan Sauce

4 | boneless pork loin chops, 1 1/2" thick |
Kosher salt | |
Black Pepper | |
1 Tbs | unsalted butter |
2 Tbs | olive oil |
3/4 lb | cremini mushrooms, sliced 1/4" thick |
1 cup | dry sherry |
1 1/2 cup | brown chicken stock |
3 sprigs | thyme |
2 Tbs | capers |
Preheat oven to 450. Season pork chops with salt & pepper. Combine butter/oil in skillet; heat & cook chops for 2-3 minutes/side on high. Transfer chops to oven, reserving butter/oil. Bake for 6-10 minutes (depending upon thickness--DON'T OVERCOOK). Transfer chops to a plate. Return pan w/butter & oil to the stove on high heat and cook mushrooms for 1-2 minutes. Add sherry & cook for 4-5 minutes (rapid boil) until liquid evaporates. Add stock & thyme and cook 8-10 minutes until reduced by half. Add capers & plate suices and cook 1-2 minutes. Remove thyme sprigs & serve.
