Chinese Chicken and Vegetable Fried Rice

Ingredients: | |
1/2kg | boneless chicken shredded |
3 glasses | boiled rice |
3 | eggs |
2 carrots juilliened | |
1 cup | cooked green peas |
Pinch | black pepper |
Pinch | red pepper |
Soya sauce as required | |
1/2 cup | oil |
Salt to taste |
Method:
1. In a wok put carrots with a little bit of water, so that the carrots are cooked properly.
2. After 10 mins add peas and cover with lid.
3. After the water dries, add oil followed by chicken.
4. In a separate bowl whisk eggs with a pinch of salt, red and black pepper.
5. In a separate pan pour the eggs and break it into small pieces till nicely done.
6. In a wok, put a layer of oil for greasing followed by a layer of rice, then a layer of vegetables and chicken, followed by eggs sprinkled at the end.
7. Sprinkle with soya sauce from time to time.
8. Keep adding layers of rice, vegetables, chicken and egg with soya sauce at the end.
9. Below the lid put a newspaper for dum. Leave on dum for 15-20 mins.
10. Serve with raita or plain.
