Pan Gravy for Roast Turkey

1/2 c. | Fat from drippings |
1/2 cup | all-purpose flour |
4 cups | drippings with enough chicken broth to equal 4 cups |
Directions:
1. Remove the turkey from the roasting pan and keep warm while preparing gravy. Leaving crusty bits in the roasting pan, pour pan drippings into a large measuring cup. Skim off and reserve fat from the drippings. (To skim off the fat, tilt the measuring cup and spoon off the oily liquie that rises to the top.)
2. Return 1/2 cup of the fat to the roasting pan; discard any remaining liquid. Stir flour into fat in pan. Cook and stir over medium heat until bubbly.
3. Remove pan from heat. Add enough broth to drippings in measuring cup to equal 4 cups liquid. Add all at once to flour mixture in pan. Cook and stir until thickened and bubbly.
4. Cook and stir one minute more. Season to taste with salt and pepper.
