Sausage Soup

SICILIAN SAUSAGE SOUP 1 lb. Italian sausage – casings removed | |
1 ½ cups | chopped onions |
1 tsp. | minced garlic |
1 TBLS | olive oil |
5C | chicken broth |
1 – 28 oz. | can diced tomatoes in juice |
1 tsp.. Fresh basil or ½ dry | |
1 C | elbow macaroni or tortellini |
Salt | |
pepper to taste |
I add diced zucchini or chopped kale
In pot break up and cook sausage and onion in olive oil over med. heat about 10 mins. and onion is transparent add garlic stirring occasionally 1-2 mins more.
Add the chicken broth, tomatoes, basil and bring to boil. Add zucchini or kale if using then add macaroni, salt and pepper. Reduce heat again to low and let soup simmer for 25 mins, partially covered until macaroni is tender.
