Chicken and Avacado Spring Rolls

Ingredients: | |
Cooked Chicken breast, diced, (150g) | |
1/2 | Red pepper, diced |
1/2 | Avocado, minced |
2 | basil leaves, minced |
2 | parsley stems, minced |
1 Tbsp | lemon juice |
1 Tbsp | Greek yogurt |
1 tsp | hot sauce |
- Pinch of salt and pepper
Mix all ingredients in a bowl.
Soak rice paper in warm water for 5 seconds then let sit out for 30 seconds. Once ready, add 2 tbsp of filling inside paper and wrap. Lightly brush rolls with egg yolk before cooking.
Once all filling has been used, fry spring rolls in a pan, use grapeseed oil or olive oil. For 5 spring rolls I used about 1/2 cup of oil.
You can also eat these raw without frying them.
