Paleo Grilled Vegetables

4 | carrots, peeled and cut in half |
2 | onions, quartered |
1 | zucchini, cut into 1/2-inch rounds |
1 | red bell pepper, seeded and cut into cubes |
1/4 cup | olive oil |
• Sea salt and freshly ground pepper, to taste | |
Balsamic vinegar |
Heat the grill to medium-high heat.
Brush the vegetables lightly with olive oil and season with sea salt and freshly ground pepper.
Place the carrots and onions on the grill first because they take the longest.
Cook the vegetables for 3–4 minutes on each side.
Transfer to a serving dish and drizzle with olive oil and balsamic vinegar.
Serves 4.
