Microwave Caramel Corn

16 c. | Popped popcorn |
1 c. | Brown sugar |
¼ c. | Light corn syrup |
½ c. (1 stick) | Butter or margarine |
½ t. | Salt |
1 t. | vanilla |
Directions:
1.Place popcorn in large, clean (never-used) paper grocery bag. In 8-cup microwave-safe measure, combine brown sugar, corn syrup, butter and salt. Microwave on HI 2 minutes. Stir well. Microwave 3 more minutes on HI, stirring after each minute. Stir in vanilla. Stir well and pour over popcorn in bag. Fold over top of bag a couple of times.
2.Shake well and microwave on HI 2 minutes, shaking well after each minute. Microwave another 1 minute, shaking after each 30-second interval. Pour contents out onto large sheet of aluminum foil. Let cool. Store in airtight container. Makes about 4 quarts caramel corn.
