Grandma's Overnight Rolls

2 c. + 2 T. divided | sugar, (1 c. + 1 T. divided) |
4 c. | lukewarm water, (2 c.) |

1 c. | oil, (1/2 c) |
14 c. | flour, (about 6 1/2 cups) |
At about 10 or 11 a.m. mix yeast and 1/2 cup water and 2 T. sugar and let set for 5 minutes. Then mix with 2 cups sugar, 4 cups lukewarm water, salt, oil and enough flour to make a soft dough. Knead until smooth (about 10 minutes). Put dough into greased bowl; turning to grease top of dough. Cover with loose plastic wrap sprayed with Pam.
Let rise, knead every few hours. Put into greased pans before going to bed, making rolls, sweet rolls or loaf bread. Let stand overnight.
Bake next morning in 350 degree degree for 15 minutes.
REFRIGERATOR DIRECTIONS: This dough can be put in the refrigerator overnight before letting it rise. About 31/2 to 4 hours before serving, take the dough out of the frig; punch down and form into rolls and put into greased baking pans. Cover with plastic wrap sprayed with Pam and let raise for about 3 hours. Bake.
This dough should be use within four days.
BREAD MACHINE DIRECTIONS: Add all ingredients, except yeast, in bread machine. Make well in flour for yeast. Start bread machine on dough cycle. When cycle is complete (about 1 1/2 hours) form into rolls and put in greased 9 x 13 pan. Cover with plastic wrap sprayed with cooking oil. Let rise until doubled in size (about 3 hours). One-half recipe makes 24 rolls. *After dough has completed the bread dough cycle in bread machine, it can be placed in a large bowl, sprayed with cooking spray, covered loosely with plastic wrap (sprayed with cooking spray). Put in refrigerator for up to 4 days. Punch down as needed. When ready to use, remove from refrigerator; punch down on floured surface; form into rolls, and let rise as above. Bake as above.
