Cream Cheese Mints

If you don’t have candy molds, roll the mints and then flatten them with a fork. Ingredients: 1 3oz. Pkg. Cream cheese (room Temperature) 1/4 –1/2 t. Flavoring extract ( peppermint, butter, almond, wintergreen, etc.)
      Food Coloring

21/2 – 3 c. Powdered Sugar
Super-fine sugar to roll balls in
Directions:
1. Mix cheese in bowl until soft.
2. Add coloring and extract.
3. Gradually add the powdered sugar; mixing and kneading until “pie dough” consistency.
4. Roll into “marble-size” balls; dip in super-fine sugar and press into molds.
5. Unmold at once onto waxed paper; when firm, transfer to cake-rack and let dry for a few hours.
6. They keep a long time in an airtight container in the freezer.
