Amish Baked Oatmeal

1-1/2 cups | quick-cooking oats, (3 cups) |
1/2 cup | brown sugar, (3/4 cups) |
1/2 cup | milk, (1cup) |
1/4 cup | butter, melted, (1/2 cup) |
1 | egg, (2) |
1 teaspoon | baking powder, (1 1/2 tsp) |
3/4 teaspoon | salt, (1/2 tsp) |
1 teaspoon | vanilla extract, (1 1/2 tsp) |
Warm milk, (1 cup + 2 Tbl. add to oatmeal mixture before baking) |
* Combine the first eight ingredients; mix well. Spread evenly in a greased 13-in. x 9-in. baking pan. (Can be refrigerated overnight).
* Bake, uncovered, at 350° for 25-30 minutes (35-45 minutes) or until edges are golden brown. Immediately spoon into bowls; add milk. Top with fruit and/or brown sugar, cinnamon and raisins as desired. Yield: 6 servings.
