Chicken Posole Soup

Ingredients: | |
4 | radishes, cilantro leaves for garnish |
1 T. | Olive oil |
1/2 C. | Onion, finely chopped |
1/2 C. | Celery, finely chopped |
2 | cloves, finely chopped |
1 t. | Dried oregano |
3/4 t. | Ground cumin |
1/2 t. | Chili powder |
4 canned tomatillos, drained and coarsely chopped | |
28 oz. | chicken broth |
15 oz | canned white hominy rinsed and drained |
2 C. | Cooked chicken breast, chopped |
1 T. | Fresh lime |
S & P | |
Avocado |
Directions:
Heat oil, add onion, celery,garlic, spices - sauté 2 min.
Stir in tomatillos - 1 min.
Add broth and hominy.
Bring to boil and reduce to simmer - 8 min. Stir in chicken and cook 2 min.
Stir in lime juice, S & P, divide into serving bowls with avocado, radish slices, cilantro, Cojita cheese and tortilla chips
