The Chew: Mario Batali’s BBQ Salmon Sandwich Recipe Ingredients BBQ SAUCE:
      Extra Virgin Olive Oil
    1  Red Onion,, (chopped)
    3 Cloves  Garlic,, (Minced)
    2 tablespoons  Chipotle in Adobo
    1 tablespoon  Honey
    2 teaspoons  Worcestershire Sauce
    1 tablespoon  Whole Grain Mustard
    1/2 cup  Ketchup
    1 tablespoon  Apple Cider Vinegar
4; 6 ounce pieces Skinless Salmon Fillets Salt to taste Pepper to taste CUCUMBER RADISH SLAW: 1 English Cucumber (Thinly Sliced)
    1 Bunch  Radishes,, (Thinly Sliced)
    4  Scallions,, (Thinly Sliced On A Bias)
    1/2 cup  Cilantro, (Roughly Chopped)
    1/2 head  Red Cabbage,, (Thinly Sliced)
    2 tablespoons  Apple Cider Vinegar
    1 tablespoon  Honey
    3/4 cup  Extra Virgin Olive Oil
      Salt to taste
      Pepper to taste

4 Sesame Brioche Buns

1. Start by making the barbecue sauce. Cook onion until translucent in olive oil in a large pot, then toss in the garlic and cook for about 30 seconds. Then toss in the rest of the ingredients. Simmer for 10 minutes, remove from heat, and then puree until smooth in a blender.
2. Preheat grill to medium-high. Season salmon with salt and pepper and grill, skin-side down, for about 3 to 4 minutes and then flip and brush with barbecue sauce. Grill for 2 to 3 more minutes, or until opaque. Roast buns on the same grill. Then set aside the salmon and begin making the cucumber radish slaw.
3. Combine cucumber, radishes, scallions, cilantro, and red cabbage in a bowl. 4. In a separate bowl, mix together apple cider vinegar, honey, olive oil, salt, and pepper. Then mix everything together.
5. Assemble the sandwiches with a piece of salmon on the bun, the slaw on top, a drizzle of barbecue sauce on top, and then top it off with the other half of the bun.
