WATERMELON - Watermelon Gazpacho

Watermelon Gazpacho | |
1 large | tomato, seeds removed and coarsely chopped |
1/2 serrano chile | |
2 cups | cubed fresh watermelon, reserve 1/4 cup for garnish (optional) 1 teaspoon red wine vinegar |
1/4 cup | extra-virgin olive oil |
2 Tablespoons | red onion, minced |
1/2 | cucumber, seeded and coarsely chopped |
2 Tablespoons | minced fresh dill, more for garnish |
Kosher salt, to taste | |
freshly ground black pepper, to taste | |
1/4 cup | crumbled feta cheese |
1. In a blender, purée the tomatoes, chile and watermelon.
2. Add red wine vinegar and olive oil. Pulse.
3. Add the red onion, cucumber and dill. Purée until smooth.
4. Season with salt & pepper. Pulse again.
5. Transfer to bowl and chill in refrigerator to blend flavors.
6. Pour into chilled bowls and sprinkle with dill, feta and watermelon, if desired.
