Tapioca pudding with bananas

A- 4 cups coconut milk | |
1/2 cup | white sugar |
1 tsp | salt |
1 bunch | bananas |
B- 1/4 cup tapioca pearls | |
6 cups | water |
Garnish: | |
mint leaves |
Slice bananas and set aside
In a small pot combine ingredients B and bring to a boil
Simmer for 10 minutes until the tapioca pearls are almost clear with a white center.
Turn heat off and cover with a lid for 10-14 minutes until the pearls are completely cooked, the whole tapioca pearls should be clear colored all the way through. If still uncoiled, keep cover on for few more minutes.
Strain tapioca and run under cold water. Set aside.
Combine coconut milk, sugar, salt and bring to a boil in a pot on medium/high heat. Reduce to medium heat.
Add sliced bananas and tapioca pearls, mix well.
Serve in clear glass bowls or champagne glasses with a fresh mint leaf as garnish.
May be served hot or cold.
