Prawn sambal

Ingredients | |
1 kg | Prawns, deveined, and marinated in turmeric & salt |
1 medium | onion- sliced |
Ginger, garlic paste | |
6 | dried chillies, soaked in water and ground |
1 tblesp dried prawns roasted and pound 1 tblesp Assam juice | |
1/2 cup | Coriander leaves, chopped or 2 sprigs curry leaves, crushed |
1/2 tsp | sugar |
Salt to taste | |
Oil for frying |
Method
1. Fry marinated prawns in 1 tblesp of oil and remove retaining oil in pan.
2. Add more oil if necessary and fry onions till soft and tender. Then add ginger/ garlic paste and fry till fragrant.
3. Add ground dry chillies and and fry well.
4. Add pounded dried prawns, coriander/ curry leaves, sugar and salt to taste and then assam juice.
5. Let to boil and add fried prawns, fry till almost dry.
