SLOPPY JOES - GROUND CHICKEN - Sloppy Joes with White Cheddar Fondue and Roasted Tomatoes

Chicken Sloppy Joes with White Cheddar Fondue and Roasted Tomatoes The Chew For Roasted Tomatoes 8 Roma or Plum Tomatoes; halved lengthwise | |

For White Cheddar Fondue | |
2 tablespoons | Butter |
2 tablespoons | Flour |
4 cups | Milk |
1/2 small | Onion, peeled and diced |
1 | Bay Leaf |
1 teaspoon | Salt |
Pinch | Nutmeg |
White Pepper | |
8 ounces | White Cheddar |
1/2 teaspoon | Dijon Mustard |
1 teaspoon | Worcestershire Sauce |
For the Sloppy Joes | |
1/2 cup | Onion, finely chopped |
1/4 cup | Celery, finely chopped |
1/4 cup | Bell Pepper, finely chopped |
1 pound | Ground Chicken |
3/4 cup | Tomato Sauce |
1/4 cup | Ketchup |
1 tablespoon | Light Brown Sugar |
1 tablespoon | Worcestershire Sauce |
2 teaspoons | Red Wine Vinegar |
1 | Cinnamon Stick |

1. For Roasted Tomatoes
Preheat the oven to 450°F.
Toss Tomatoes with 2 tablespoons Olive Oil, Garlic, Salt, and Pepper. Roast in oven for 15-20 minutes or until Tomatoes achieve a nice caramelized roasted color. Remove from oven. Once cooled, remove skins from Tomatoes.
Lower heat to 350°F.
2. For White Cheddar Fondue
In a medium size saucepan, heat Butter and sauté Onions until tender. Whisk in Flour and cook, stirring constantly, over low heat until light cream color. After one minute, gradually add Milk to roux (Flour and Butter mixture), whisking constantly. Whisk in the Dijon Mustard.
Bring sauce to a boil, whisking constantly and then gradually stir in Cheddar. Season with Salt, Nutmeg, and Pepper, to taste. Whisk until Cheese is melted and sauce is smooth.
3. For the Sloppy Joes
Heat 2 tablespoons of Olive Oil in a skillet over medium heat. Add Onions, Celery and Bell Peppers and sauté for 2-3 minutes.
Increase heat to medium-high, add Ground Chicken (breaking it up with a spatula) and brown, stirring occasionally - about 10 minutes. Pour off excess fat.
Add remaining ingredients, bring to a boil, and then reduce heat to medium-low and simmer, stirring occasionally, for 15 - 20 minutes.
Remove Cinnamon Stick and spoon hot sloppy joes onto Brioche Buns or your favorite bread on a baking sheet. Top sandwiches with Roasted Tomatoes, White Cheddar Fondue, Corn Chips, and top of bread.
Helpful Tips:
1. Using lean ground chicken keeps the recipe inexpensive and healthy.
2. You could use the Sloppy Joe mixture as a Bolognese sauce or freeze it.
