TOASTED PEANUT AND RICE SALAD (Note: The quantity I made for Sunday was 1.5 cups raw rice) | |
125 gr | Busmati rice and 25 gr wild rice., (I used brown rice cooked as directed on packet). Allow to cool and keep at room temperature. |
4 | chopped spring onions |
shallots, alternative | |
125 gr | sultanas |
1/2 pkt bean sprouts | |
125 gr | toasted unsalted peanuts, semi crushed |
Mix above and drizzle with dressing - 4 tablesp balsamic vinegar and 1 tablesp peanut oil.
