Farmers Market BLT Mario - The Chew
    1/2 pound  Bacon
    3 tablespoons  Honey
    4  Tomatoes,, (mixed varieties if desired)
    1  Egg,, (beaten)
    1/2 cup  Cornmeal
      Quick Cooking Polenta, alternative
      Olive Oil
      Salt
      Freshly Ground Pepper
      cooked Bacon
    8 slices  Country Loaf
      Pickles,, (sliced, to taste)
4 Nice Leaves of Green Leaf Lettuce <><><><><><><><><><><><><><><><><><><><><><><><><><><> Romesco Aioli:
    6  Egg Yolks
    2 Cloves  Garlic
    pinch  Chile Flakes
    1/3 cup  Slivered Almonds
4 Jarred Roasted Red Peppers squeeze Lemon Juice
      Salt
      Freshly Ground Pepper
    3/4 cup  Olive Oil
    1/4 cup  Reserved Bacon Fat

1. Heat a large nonstick pan over medium heat, add the Bacon to the pan while still cold and cook until the Bacon is crispy. Drizzle with the Honey and cook another minute to caramelize. Remove Bacon from the pan and reserve the fat for the Aioli.

2. Slice the Tomatoes and set up two shallow dishes -- one with the beaten Eggs, and one with the Cornmeal or Polenta. Dredge half of the Tomatoes in the Egg, and then into the Polenta.

3. Heat a medium sauté pan over medium heat, and add a few tablespoons of Olive Oil. Add the dredged Tomatoes and cook until lightly golden brown on both sides. Drain on a paper towel lined plate.

3. Season the remaining half of the Tomatoes with Salt and Freshly Ground Pepper. Place a slice of each type of Tomato on 4 slices of bread, squeezing some of the Tomato juice on each bread slice. Top with Bacon, Lettuce, Pickles, and a dollop of the Aioli. Sandwich with the remaining bread and enjoy.

To make the Romesco Aioli: Combine all ingredients except for the Olive Oil and reserved Bacon fat in a food processor. Pulse until completely smooth. With the processor running, add the Olive Oil and Bacon fat in a slow, steady stream. Season to taste with Salt and Freshly Ground Pepper.

Helpful Tips:
1. Using fried tomatoes dredged in cornmeal and fresh tomatoes adds dimension.
2. Romesco sauce is similar to a mayonnaise with almonds, chilies and peppers.
3. The bacon fat can be used in the aioli sauce.
