½ Gallon | Bui Broth |
1 Pound | Rice Noodles, (after soaking) |
1 ¼ Pound | Beef, strip loin |
2 Cups | Beef Marinade, (recipe below) |
¼ Pound | Baby Bok Choy, cut bias |
¼ Pound | Broccolini, cut bias |
¼ Pound | Mushroom, gourmet mix, quartered |
¼ Pound | Carrots, julienne |
¼ Pound | Red Onion, julienne |
¼ Pound | Red Pepper, julienne |
¼ Pound | Snap Pea, cut bias |
1 Tablespoon | Garlic, minced |
1 Tablespoon | Ginger, minced |
Salt, to taste | |
Black Pepper, to taste | |
Garnishes: Daikon Radish curls | |
Mint, chopped | |
Cilantro, chopped | |
Thai Basil, chopped | |
Chili Garlic Sauce | |

Method of Preparation 1. Slice beef thin and marinate for 1 hour. Put on sheet pan and flash in oven. 2. Sweat ginger and garlic in pan. Add all vegetables and sauté until tender. 3. Add bui broth and bring to a boil. 4. Place rice noodles and beef in serving bowls. 5. Pour broth with vegetables over rice noodles and beef. 6. Garnish with Daikon curls and cilantro. 7. Serve mint, Thai basil, chili garlic sauce and lime on the side. Beef Marinade Ingredients | |

1 Cup | Water |
1 Tablespoon | Sesame Oil |
1 ½ Teaspoons | Ginger, minced |
1 ½ Teaspoons | Garlic, minced |
Method of Preparation 1. Combine all ingredients in a bowl and whisk together. 2. Marinate beef for 1 hour. Bui Broth Ingredients Yield: 2 quarts | |

1 | Cinnamon Stick |
½ Cup | Diced Yellow Onions |
1 Pound | Beef Scraps |
½ Teaspoon | Black Peppercorns |
½ Teaspoon | Coriander Seeds |
½ Teaspoon | Whole Garlic Cloves |
1 Tablespoon | Kosher Salt |
1 Tablespoon | Sugar |
1 ½ Teaspoons | Fish Sauce, (available in Asian markets) |
3 Quarts | Water |
Method of Preparation
1. Wash cinnamon stick and anise before using.
2. In a large stock pot add water, onions, beef scraps, salt, garlic, peppercorns, anise, cinnamon and coriander. Bring to a slow simmer. Do not boil.
3. Simmer for 2 hours, do not boil.
4. Skim broth until clear. Add fish sauce and sugar, mix well.
5. Strain broth through fine mesh strainer.
