FOILED SALMON AND LATE SUMMER VEGETABLES

4 oz. | salmon fillet or steak |
1 sm. | yellow squash, thinly sliced |
zucchini, alternative | |
1 sm. | tomato, skinned, seeded, diced 1/4" |
1 green onion with top, thinly sliced | |
2 tsp. | vodka |
white wine, alternative | |

pepper to taste |
Preheat oven to 425 degrees. Place cookie sheet or baking pan in oven to preheat 5 minutes. I've also used a gas grill.
Meanwhile, smear oil in center of a 12" square of aluminum foil and place salmon, squash, tomato and onion in center of foil over oil. Sprinkle with vodka, salt and pepper; fold diagonally to form a triangle; tightly seal edges.
Place foil package on preheated cookie sheet, return to oven and bake 10 to 15 minutes, or until salmon is opaque and vegetables are tender. Open foil packet, arrange salmon and vegetables on dinner plate and serve.
