Cottage Cheese Cheese Sauce

Cottage Cheese Pasta Sauce I came across this recipe, and while it sounded a little bland at first, it also seemed like a great way to get some protein into my picky eater. It actually ended up being a hit with the whole family! Your choice of pasta | |
1 cup | cottage cheese |
1 | egg yolk |
1/2 cup (lightly packed) | Parmesan cheese |
Salt, to taste | |
pepper, to taste | |
1 tsp | lemon juice |
Cook the pasta, and reserve a 1/4 of cooking water before straining. While pasta is cooking, combine all the ingredients in a bowl. Place reserved water in a pot, and bring to a boil over medium-high heat until reduced by almost half. Whisk in the cottage cheese mixture. Reduce heat, and stir until the cottage cheese is smooth and the cheese is melted. Add lemon juice to cheese sauce before serving with pasta.
If you want to sneak some vegetables in to your wee ones, steam some cauliflower (about 3/4 C) and stir it into your cheese sauce when everything is just about melted. Using an immersion blender, puree the cauliflower in to the cheese. The kids will never be the wiser!
I've served this tossed with spaghetti (as the original recipe states), and I've used it as a sauce for a baked mac and cheese. Most often, though, we have wheel-shaped pasta which makes our kids refer to this recipe as "White Wheels". We often like to toss steamed broccoli with this pasta (because that's Mr Picky's favourite vegetable). It gets quickly gobbled up by my wee ones!
