Mustard kale quinoa salad

3 T | mustard |
2 T | honey |
1 t | lemon juice |
1 t | salt |
1/2 t | pepper |
1/4 cup | olive oil |
Whisk together to combine then refrigerate. | |
1 cup | quinoa |
2 cups | water |
Bring to the boil and simmer for 15-20 mins.
Place one diced bell pepper and one diced tomato in serving dish. Add chopped kale, cooked quinoa and slivered almonds. Combine with dressing.
Served with shredded Parmesan cheese, to taste.
