WW Mini Zucchini Quiches

^2 small zucchini, finely chopped ^1 large onion, finely chopped | |
1 cup | shredded Parmesan cheese |
^6 larges eggs | |
1/2 cup | all-purpose flour |
1/4 cup | finely chopped basil |
3 Tbsp | EVOO |
2 tsp | baking powder |
1 tsp | sugar |
1 tsp | kosher salt |
1/2 tsp | black pepper |
Preheat oven to 375. Coat muffin pan with cooking spray.
Combine all ingredients in a large bowl.
Spoon 1 heaping tablespoon into each hole, stirring mixture often.
Bake until bottoms are golden brown, about 15 minutes.
Cool on wire rack.
Yields 48 mini quiches.
