Season chicken breast with salt and pepper. Drizzle roasting pan with sun-dried tomato oil. Coat chicken with oil and roast 20 minutes at 350*.
Top chicken with pesto, sliced tomatoes and mozzarella cheese. Bake until melted. Garnish with basil leaves.
Serve with Pasta with Spicy Sun-Dried-Tomato Cream Sauce :]>
