Home-made tortillas

4 C | flour |
1 t | salt |
2 t | baking powder |
2 T | shortening |
lard, alternative | |
1 1/2 C | water,, (hot is best) |
Whisk together flour, salt, baking powder. Mix in shortening with hands or start with a pastry cutter (continue
to mix until like cornmeal). Add water and mix until dough holds together. Put onto well floured surface and knead for a couple of minutes until dough is smooth and elastic. Divide into 16 balls, roll each one into circles, very thin, re-flour surface as necessary. Heat pan on medium-high heat. This does not need to be greased. Cook until slightly golden and bubbly, flip and cook for a minute more. Keep warm in a tortilla warmer, or roll in a clean dishtowel. Can be frozen when cool.
