Chicken and peach-lime salsa

2 1/2 lbs | chicken,, (brst or quarters) |
3 tbsp | olive oil |
6 cloves | garlic |
1 tsp | cumin |
2 tbsp | diced red onion |
1 tbsp | chopped basil |
1 1/2 | chopped fresh mint |
1 1/2 tsp | lime juice |
1/2 tsp | sugar |
2 | peaches,, (peeled) |
1 | jalapeño pepper minced |
3/4 tsp | salt |
1/2 tsp | black pepper |
1. Marinate chicken in olive oil, cumin and garlic for 1 hour.
2. Mix onion, basil, mint, lime juice, sugar, peaches and jalapeño, and 1/4 tsp salt. Let stand 1 hour.
3. Discard chicken marinade and let stand for 30 minutes. Cover chicken in salt and pepper. Cook and cover with salsa.
