ORZO SALAD Ingredients: | |
12 ounce | orzo |
2 tablespoon | plus ½ olive oil. |
1 ½ cup | crumbled feta cheese |
1 cup | chopped red pepper |
1 cup | chopped yellow pepper |
¾ cup | pitted chopped kalamata olives |
4 | green onions chopped |
2 tablespoons | drained capers |
½ cup | chopped parsley |
1 cup | chopped sundried tomatoes |
Dressing ingredients | |
3 tablespoons | fresh lemon |
1 tablespoon | white wine vinegar |
1 tablespoon | minced garlic |
1 ½ teaspoon | dried oregano |
1 teaspoon | Dijon Mustard |
1 teaspoon | ground cumin |
Directions:
Cook orzo in a large pot. Drain. Rinse with cold water. Transfer to large bowl. Toss with 2 tablespoons of olive oil. Add crumbled feta cheese, chopped peppers, olives, onions, and capers.
Combine dressing ingredients in a small bowl. Mix in ½ cup of olive oil.
Add dressing to orzo mixture and toss to blend. Season to taste with salt and pepper.
